Blueberry Salad
Mixed Baby Greens
Fresh blueberries
Feta cheese
Candied walnuts
Poppyseed dressing
In a serving bowl, toss the greens with poppyseed dressing. Layer the remaining ingredients as listed. Serve immediately.
Poppy Seed Dressing
1/2 c. sugar
1/3 c. vinegar
2 T finely chopped onion
2/3 c. vegetable oil
2-3 tsp poppy seeds.
Blend all ingredients in blender.
Candied Nuts
2 cups walnuts or pecans
1/4 c. butter
1/2 c. brown sugar
1/2 tsp. salt
2 tsp water
In non-stick pan, combine butter, sugar, salt and water. Bring to boil over medium-high heat. Stir until sugar is dissolved, about 2 mn. Mixture will be bubbly and foamy looking. Be careful, this is HOT. Add pecans and stir while cooking for 1 1/2 mn. Remove to sprayed cookie sheets. Bake @ 400 degrees for 5 mn. Stir.
Spread on tinfoil to cool.
